Raisin and Almond Tea Loaf |

Taken from a packet of ground almonds. I doubled the recipe. One has been eaten and one is in a airtight container. Ingredients:
12 ounces margarine |
12 ounces caster sugar |
6 medium eggs (beaten) |
1 teaspoon almond essence |
6 ounces ground almonds |
8 ounces raisins |
12 ounces self raising flour |
6 tablespoons milk |
Directions:
1. Cream margarine and sugar until light and fluffy 2. Add eggs a bit at a time. 3. Add almond essence 4. Lightly FOLD in the rest so as not to loose all that air you have beaten inches 5. Put into two 2 lb loaf tins (GREASED AND LINED). 6. Cook in a preheated oven 160 c /325f (middle shelf) for 1 hour to 1 hour and 15 minutes. |
