Rainwater's Thanksgiving Creamed Corn |

This is a favorite request at the upscale 'Rainwater's on Kettner' restaurant. Recipe courtesy the SD Union newspaper. Ingredients:
4 cups fresh corn kernels (or frozen) |
1 cup whipping cream |
1 cup half-and-half |
1 teaspoon salt |
1 teaspoon sugar |
1 pinch cayenne pepper |
2 tablespoons melted butter |
2 tablespoons flour |
Directions:
1. Combine all ingredients except butter and flour. Bring to a boil and simmer for 5 minutes. 2. Mix together the flour and the butter in small sauce pan. Heat slowly and stir until smooth. Add to simmering corn. Mix well, allowing mixture to simmer for 5 minutes. Remove from heat and serve. |
