Rainbow Salad With Lemon Poppyseed Dressing |

This salad boasts a rainbow of colors, with feta cheese and crunchy walnuts, drizzled in a sweet and tangy poppyseed dressing. Ingredients:
for salad |
3 cups romaine lettuce, torn |
1 cup english cucumber, chopped |
2 scallions, chopped |
1/2 cup yellow bell pepper, chopped |
1/2 cup red bell pepper, chopped |
1 large carrot, peeled and sliced thin diagonally |
1 granny smith apple, cored and sliced thin |
1 cup fresh blueberries |
1/2 cup walnuts |
2/3 cup feta cheese (i use a mediteranean herb flavord feta) |
for dressing |
3 tbsp. apple cider vinegar |
2 tbsp fresh lemon juice |
2 tsp. dijon mustard |
2 tsp. honey |
1/2 tsp onion powder |
1/4 tsp kosher salt |
1/2 cup grapeseed oil |
2 tbsp poppy seeds |
Directions:
1. Toss lettuce, cucumber, scallions, bell pepper and carrot together. Arrange apple slices ontop and sprinkle with blueberries, walnuts and feta cheese. 2. To prepare dressing, whisk together vinegar, lemon juice, mustard, honey, onion powder and salt. Slowly drizzle in oil, whisking constantly, until combined. Stir in poppy seeds. 3. Pour over salad and serve. |
