I love veggies and I especially love fixing a dish that presents a rainbow of bright colors! Ingredients:
1/2 cup chopped carrots |
1/4 cup chopped green onion |
1/4 cup red bell pepper |
1 teaspoon butter |
1 teaspoon olive oil |
1 cup chicken broth or vegetable broth |
1/2 cup uncooked long grain rice |
1/8 teaspoon salt |
1/8 teaspoon pepper |
1 medium yellow (or zucchini) squash, halved lengthwise and then cut in half-moon slices |
Directions:
1. Saute carrots, bell pepper, and onion in butter/olive oil until tender. 2. Stir in the broth, rice, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 12 minutes. 3. Stir in the yellow squash. Cover and simmer 6-10 minutes longer or until rice and vegetables are tender. |
