A wonderful rich layered bar cookie Ingredients:
3/4 cup butter,softened ( no subs) |
1/2 cup packed light brown sugar |
1 egg yolk |
1 tsp. vanilla extract |
2 cups all-purpose flour |
1 cup packed light brown sugar |
3 eggs |
1 tsp. vanilla extract |
3 tbsp. all-purpose flour |
1/4 tsp. salt |
2 cups chopped brazil nuts ( or toasted walnuts,pecans) |
1 cup shredded coconut( sweetened) |
Directions:
1. Preheat oven to 350 F. 2. Beat butter in mixing bowl for 30 seconds. Add the 3. Brown sugar and beat until combined.Scrape down sides 4. Of bowl.Beat in egg yolk and vanilla till combined. 5. Beat in the 2 cups flour till combined.Pat the dough 6. Evenly into the bottom of a greased foil lined 7. 9 x13 pan. Bake in a preheated oven for 10 minutes. 8. Cool in pan on a wire rack for 5 minutes. 9. Meanwhile, stir together the 1 cup brown sugar,eggs 10. And 1 tsp.vanilla in a large bowl. Best at medium 11. Speed until combined. Beat in the 3 TBSP. Flour and the salt until combined. Stir in the chopped nuts and coconut. Spread filling evenly over baked crust. 12. Bake in 350 F. Oven for 20 more minutes or until 13. Set. Cool in pan. Cut into bars. Cover and chill 14. Leftovers. 15. Also great with melted chocolate drizzled over the top. |
