My mother used to make these cookies but only at Christmas time so we all looked forward to them. Ingredients:
2 eggs |
1 cup white or brown sugar |
1 teaspoon vanilla |
1 cup chopped dates |
1 cup chopped nuts |
2 3/4 cups corn flakes |
Directions:
1. Beat eggs, sugar and vanilla together in a bowl. 2. Add the egg mixture to the dates, nuts and cornflakes, stirring to coat well. 3. Drop by spoonsful onto cook sheets covered with parchment paper. 4. Bake at 350 F until golden brown - depending on your oven you need to watch carefully to be sure they don't overcook and get too hard. |
