A simple healthy salad rice I saw my colleague eating. It was prepared by her mother. I did some modification to come out with this version. Her name is Ruth Athen Gayathri. So I name this recipe after her : RAG :) I think the sting of this recipe is the long green chillies. Ingredients:
1 cup brown rice |
1 chopped medium yellow onion |
2 chopped long green chilies |
100 g low-fat plain yogurt |
soy sauce |
1/2 cup corn |
1/2 cup of greean peas |
1/2 cup of baked fish fillet (seasoned with soy sauce) |
Directions:
1. Cook rice. Blanched corn and green peas. Cube baked fish fillet. Then just toss everything together. If soy sauce is not salty enough for you, you may add salt. 2. Let is stand for 1 hour or so in refrigerator. Serve chilled. |
