If you have hardboiled eggs onhand, the 20 minutes stands. DH loves radishes, and this is just delish! enjoy. I made the dressing a few days before. Ingredients:
dressing |
salt/pepper |
1 1/2 tsp. honey mustard |
1 1/2 tsp. honey |
2 garlic cloves |
1 1/2 table. balsamic vinegar |
3 table. evoo |
1 1/2 pistachio oil (i subbed ground pistachios, 2 tsp. and added 1 more table. evoo) |
1 scallion, finely cut |
1 1/2 table. parsley, dill, chives |
the salad |
2 cups mesclun |
2 bunches radishes, diced |
2 hardboiled eggs, crumble finely |
1 red apple (gala, honey crisp) i subbed macintosh. |
1 avocado, diced drizzled with lemon juice |
serve immediately. |
Directions:
1. Make the dressing; let it chill, and combine/develop flavors. 2. Toss all the ingredients together, and eat with gusto! |
