A delicate, light dressing. Use the food processor to slice the radishes quickly. From Diabetes Cooking for Everyone , by Carol Gelles. Exchanges: 3/4 vegetable, 1/2 fat, zero fat if fat-free mayo is used.
Ingredients:
1/4 cup buttermilk
1 tablespoon mayonnaise
2 tablespoons snipped fresh dill
salt
4 cups thinly sliced radishes
1/4 cup thinly sliced scallion (green and white)
Directions:
1. In a medium bowl whisk together the first four ingredients.
2. Add the radishes and scallions and toss to combine.
