Don't let the name fool you, there's tomatoes, cucumbers, onions etc in this delicious salad. One of my personal favorites, and so far everyone that's had it has just loved it. And considering the health benefits of it, what a plus! Ingredients:
1 cup red radish |
1 cup daikon radish (white radishes) |
1 cup cucumber |
1 cup onion |
2 cups cherry tomatoes |
2 tablespoons parsley (diced thin) |
1/2 cup balsamic vinegar (must be basalmic) |
3 tablespoons olive oil |
Directions:
1. Chop the first four ingredients to your liking, and mix well. 2. Cut the tomatoes into quarters and add to radish mix, along with parsely. 3. Mix vinegar and olive oil, and pour over the top of the salad and toss. I like to let it marinate for at least an hour before serving but it's also good straight out. |
