You may want to serve this salad in the Italian fashion, as an interlude between the entree and dessert. Ingredients:
1 tablespoon chopped fresh chives |
3 tablespoons white wine vinegar |
2 1/2 tablespoons water |
1/2 teaspoon minced fresh oregano |
1/2 teaspoon minced fresh thyme |
1 1/2 teaspoons dijon mustard |
1/2 teaspoon olive oil |
1/8 teaspoon sugar |
1 cup torn bibb lettuce |
1 cup torn radicchio |
1 cup seeded, chopped tomato |
1 tablespoon crumbled feta cheese |
2 (1/4-inch-thick) slices purple onion, separated into rings |
Directions:
1. Combine first 8 ingredients in a jar; cover tightly, and shake vigorously. 2. Combine Bibb lettuce and remaining ingredients in a medium bowl. Pour vinegar mixture over salad; toss gently. |
