This is a recipe my Portuguese mother came up with, it is WONDERFUL! Ingredients:
1 head radicchio |
2 green onions |
1/4 lb genoa salami, sliced |
1 tablespoon vinegar |
3 ounces oil |
1 ounce vinegar |
2 cloves chopped garlic |
1/2 teaspoon dijon mustard |
salt and pepper |
Directions:
1. Prepare dressing by mixing all ingredients in a blender- blend until smooth. 2. Mix with Radiccio and toss well. 3. Fry the salami in the oil and then add in the vinegar. 4. Add the salami mixture to the salad and toss. 5. Enjoy. |
