Bitter greens paried with a citrus dressing. Ingredients:
vinaigrette |
1/4 c orange juice |
2 tbs lemon juice |
1 tbs lime juice |
1 1/2 tsp grated fresh ginger |
1 tsp honey |
1/4 c extra virgin olive oil |
1/4 tsp salt |
1/4 tsp pepper |
salad |
8 oz radicchio (if you don't like this bitter green you can use a mixture of radicchio and mixed salad greens or all mixed salad greens) |
8 oz cooked green beans cut into 1 inch pieces (i like them raw) |
1/2 fennel bulb, cut into thin stips |
1 orange; separated into segments |
Directions:
1. Combine orange, lemmon and lime juices, ginger and honey in a small bowl; gradually whisk in oil. Stir in all remaining vinaigrette ingredients. 2. Combine radicchio, green beans, fennel and orange in a large bowl, toss with vinagrette. 3. Note: I make a pepper salad using the vinaigrette and two each yellow, red and orange peppers cut up into bite size pieces. I toss them with the dressing. It's a nice side for grilled chicken in the summer time, or I eat it as a meal at times. |
