Radicchio And Cabbage With Herbed Anchovy Sauce |

For the most flavorful foundation, warm vegitables until the leaves are just wilted. Ingredients:
1 tsp anchovy paste |
1 tbsp dijon mustard |
1 tbsp lemon juice |
1 clove garlic, crushed |
1/2 tsp chopped dried rosemary |
1 tbsp minced parsley |
1/2 cup olive oil (divided) |
1 small head radicchio, quartered lenghtwise |
1 small head red cabage, sliced in wedges. |
salt and pepper to taste. |
Directions:
1. In a small bowl, thoroughly combine anchovy paste, mustard, lemon juice, garlic, rosemary and parsley. 2. Add 6 tbsp of olive oil while whisking to make a smooth sauce. 3. Discard Garlic. 4. Heat a large skillet over medium-high heat. 5. Brush radicchio and cabbage with remaining olive oil. 6. Cook in preheated skillet 8 to 10 minutes, turning occasionally until tender. 7. Season with salt and pepper. 8. Stir in sauce and serve over warm radicchio and cabbage. |
