Rack of Lamb With Herbed Salt |

Taken from an old Easy Entertaining mag. Ingredients:
2 lamb racks, - 6 cutlets each |
2 tablespoons sea salt |
1 teaspoon thyme leaves, finely chopped |
1 teaspoon rosemary, finely chopped |
1 teaspoon oregano leaves, finely chopped |
1 garlic clove, finely chopped |
black pepper |
Directions:
1. Preheat oven to 200 C. 2. Set lamb in roasting pan. 3. Combine salt with all other ingredients. 4. Rub salt into lamb. 5. Place in oven, cook 30 minutes until pink. 6. allow to rest 10 minutes. 7. Carve racks into groups of 3 chops each. |
