Ingredients:
2 lbs boneless skinless chicken breast
1 cup apricot preserves
1/4 dried apricots
1 cup low sodium chicken broth
2 tbsp olive oil
1/2 cup onion
Directions:
1. heat oil in a large skillet
2. brown chicken on both sides
3. add onions and cook down a couple of min. then add diced apricots and cook until fragrant
4. add preserves and chicken broth and stir to combine. cover and cook another 10-15 min. until fully cooked flip chicken over half way through cooking process.
