Rachael's Famous Chocolate Chip Cookies |

This recipe is slightly modified, it originally used soy flour. But I used oat flour instead, which is what makes these cookies so yummy. Ingredients:
1 cup butter (or 1/2 cup butter 1/2 cup shortening) |
1 cup sugar |
1 cup brown sugar |
2 teaspoons vanilla |
2 tablespoons hot water |
2 eggs |
1 1/2 cups all-purpose flour |
2 cups wheat flour |
1 cup oats |
1 teaspoon baking soda |
1 teaspoon salt |
1 (8 ounce) bag semi-sweet chocolate chips |
Directions:
1. Cream the butter and sugar. Mix in the eggs, vanilla, hot water, salt, and baking soda. In a blender or food processer, finely chop oats until it becomes a powder. Mix into batter along with all- purpose flour and wheat flour. Mix in bag of chocolate chips with a spoon. 2. Drop by teaspoonfuls onto greased cookie sheets and bake at 350 degrees F. for 8-10 minutes or until golden brown. 3. Variation: Use any chips, such as peanut butter chips, butterscotch chips, white chocolate chips or cinnamon chips. |
