Rachael Ray's Spicy Linguini With Italian Sausage |

I saw this recipe on Rachael Ray's show and thought I would give it a try. This is a very hearty pasta dinner that is nice and spicy! The recipe calls for a red chili pepper, but I just used 3 small jalapenos instead. Enjoy! Ingredients:
1 lb linguine |
1 tablespoon olive oil |
1 lb italian sausage (hot or sweet) |
1 red chili pepper |
3 garlic cloves |
1 pint cherry tomatoes |
1/3 lb arugula |
salt |
pepper |
Directions:
1. Bring a large pot of water to a boil and cook pasta. 2. In a large pan, add olive oil using med/high heat. Brown sausage. 3. Add diced pepper and diced garlic to sausage mixture. Cook 2 minutes. 4. Add tomatoes to sausage mixture. Put a lid on the pan to help the skins of tomatoes burst. Cook about 8 minutes. 5. Add arugula to the mixture and stir until it wilts down. 6. Drain pasta and mix with sausage mixture. 7. You can add about 1/3 cup of cream if you wish, or use some of the pasta water to thin the sauce at this point. 8. Add salt and pepper to taste. 9. .Enjoy! |
