One of my kid's favorite things about their birthdays is watching me create their birthday cakes. This is one that I made for DS#1's 6th Birthday - I got the pattern from Family Fun. I printed the checkered flags and banner on the computer, laminated by using clear packaging tape on the front and back and then trimming to fit. The number of servings (16-20) is a guesstimate, as well as prep/cook time since it depends on your cake recipe and how quickly you decorate.
Ingredients:
2 (9 inch) round baked cake
3 cups white icing
1 -2 cup chocolate cookie crumb, finely crushed
1 -2 cup green sprinkles (tinted with green gel coloring) or 1 -2 cup green-tinted shredded coconut (tinted with green gel coloring)
white good & plenty candies
checkered paper or ribbon
2 toothpicks
tape (and new toy cars washed with soap and water)
Directions:
1. Cut a small semicircular notch from one cake, then position the cakes as shown and cover them with the white icing.
2. Place a small bowl in the center of each cake and sprinkle cookie crumbs around it to create the track.
3. Remove the bowls and sprinkle sprinkles onto each icing circle, then press the remaining sprinkles onto the sides of the cake for grass.
4. Lay a white Good & Plenty dotted line along the track and use a pastry bag to pipe a white icing border around the edge of the cake.
5. Create racing flags by taping small squares of the paper or ribbon to the toothpicks and place them on the track along with the race cars.
