For Spanish tapas challenge. Ingredients:
1 rabbit |
1 onion, minced |
3 tablespoons oil |
2 garlic cloves |
1 sprig rosemary |
1 teaspoon thyme |
1 tablespoon parsley |
2 cups white wine |
2 tomatoes |
4 potatoes, sliced |
1 teaspoon vinegar |
1 teaspoon salt |
1 teaspoon pepper |
Directions:
1. Fry the rabbit and onion in oil. 2. Mash together the garlic, rosemary, thyme, and parsley; add to white wine. 3. Pour over rabbit; add tomatoes. 4. Cover and cook 45 minutes at slow simmer. 5. Add potatoes. 6. Cook 30 more minutes until rabbit is done. |
