A chewy-fruity way to get the good stuff for breakfast. Ingredients:
1/2 c uncooked quinoa |
1 c water |
1/2 t cinnamon |
pinch salt |
1/2 c low fat milk or soy milk |
1 apple, diced |
1/2 c blueberries |
2 t chopped nuts |
Directions:
1. In a saucepan combine quinoa, cinnamon, salt and water and bring to a boil. Reduce heat, cover and simmer for 15 minutes or till most of the water has been absorbed. 2. Add milk and simmer uncovered for an additional 10 min. 3. Stir in apples, berries and nuts. Cover and let stand 10 minutes before serving. 4. experiment with different fruit/nut combinations 5. *Note: be sure to throughly rinse quinoa before using, rinse until there's no foam. Quinoa has a natural coating that's bitter and unpleasant tasting and needs rinsing before cooking** |
