Quintessential Quinoa Salad |

This is a really nice looking salad that my friend Diane gave me and it's really good for you. It makes a ton, so you may want to halve it! Lots of ingredients going on.....the sunflower seeds are my favourite part! Read more ! Ingredients:
1 1/2 cups quinoa |
2 1/2 cups salted water |
1 398ml can of chickpeas, drained and rinsed |
4 oz. feta cheese, cut into cubes |
1 pint cherry tomatoes, washed and halved |
1 small red onion, finely diced |
1/2 sweet yellow pepper, chopped |
1/2 sweet orange pepper, chopped |
6 cups fresh baby spinach leaves |
1 cup toasted sunflower seeds |
dressing |
2 big cloves of fresh garlic, minced |
1 tbsp. dijon mustard |
1 tsp. brown sugar |
1/4 cup balsamic vinegar |
1 cup olive oil |
pinch of salt |
fresh ground pepper |
Directions:
1. Bring water to boiling point. Add Quinoa then cover and simmer for 15-20 minutes or until all the water is absorbed. Set aside to cool. 2. Combine all the ingredients for the dressing except the olive oil in a jar with a tight fitting lid (I just used a mason jar). Shake vigorously, then add olive oil in two batches, shaking between each addition. 3. To assemble the salad: In a large bowl, combine the cooked Quinoa, tomatoes, peppers, chickpeas, Feta Cheese, sunflower seeds and spinach. Drizzle with dressing, 1/3 cup at a time and toss gently or serve dressing on the side for guests to put on themselves. |
