Ingredients:
1/3 c organic quinoa, uncooked
1/2 c red onion, chopped
1/2 c white beans cooked without salt
1 medium red bell pepper, chopped
1 clove garlic, minced
1 tsp fresh thyme
1 tsp olive oil
2 wedges lemon juice
Directions:
1. Prepare quinoa according to package's directions, adding olive oil and garlic with uncooked quinoa.
2. Combine remaining ingredients and enjoy warm or chilled.
