1/3 c organic quinoa, uncooked |
1/2 c red onion, chopped |
1/2 c white beans cooked without salt |
1 medium red bell pepper, chopped |
1 clove garlic, minced |
1 tsp fresh thyme |
1 tsp olive oil |
2 wedges lemon juice |
Directions:
1. Prepare quinoa according to package's directions, adding olive oil and garlic with uncooked quinoa. 2. Combine remaining ingredients and enjoy warm or chilled. |
