Quinoa with roasted vegetables
Ingredients:
4 cups quinoa
3 cups sliced mushroom
4 cups diced peppers
2 cups onions
1 tablespoon olive oil
1/4 cup of parmesan cheese
4 cups spinach
Directions:
1. roast vegetables at 350 for 45 minutes, salt, oil and pepper
2. cook 1 cup of quinoa with 2 cups of water for 20 minutes
3. mix all together and add raw baby spinach
