Quinoa with roasted vegetables Ingredients:
4 cups quinoa |
3 cups sliced mushroom |
4 cups diced peppers |
2 cups onions |
1 tablespoon olive oil |
1/4 cup of parmesan cheese |
4 cups spinach |
Directions:
1. roast vegetables at 350 for 45 minutes, salt, oil and pepper 2. cook 1 cup of quinoa with 2 cups of water for 20 minutes 3. mix all together and add raw baby spinach |
