Quinoa with Peas and Onion |

2 cups water |
1 cup quinoa, rinsed |
1 small onion, chopped |
1 tablespoon olive oil |
1-1/2 cups frozen peas |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons chopped walnuts |
Directions:
1. In a large saucepan, bring water to a boil. Add quinoa. Reduce heat; cover and simmer for 12-15 minutes or until water is absorbed. Remove from the heat; fluff with a fork. 2. Meanwhile, in a small skillet, saute onion in oil until tender. Stir into cooked quinoa. Add the peas, salt and pepper; heat through. Sprinkle with walnuts. Yield: 6 servings. |
