Quinoa With Peas and Cashews |

I created this several years ago when my pantry was bare. It came out so good, it's now a go to recipe for me. Ingredients:
1/2 cup quinoa, rinsed |
1 cup vegetable broth |
2 cups peas, steamed |
1 cup raw chopped cashews, toasted |
5 tablespoons soy butter |
1 small onion, chopped approx 3/4-1 cup |
1 tablespoon dried tarragon |
Directions:
1. 1. Cook quinoa with vegetable broth in a small saucepan by bringing to a boil then simmering until all the liquid is absorbed-about 15 minutes. It will have cute little tails. 2. 2. If you're a multi-tasker, while quinoa is cooking, heat butter, add onions and tarragon and saute a few minutes until onions are translucent. 3. 3. Add in cashews and peas and turn off heat. 4. 4. Mix butter mixture with quinoa and serve. |
