Quinoa with Black Beans and Cilantro |

A slightly spicy side dish of quinoa and vegetables Ingredients:
1 t canola oil |
1 large onion, chopped |
3 garlic cloves, peeled and chopped |
3/4 c quinoa |
1 1/2 c chicken stock |
1 t ground cumin |
1/4 t cayenne pepper |
75 g corn |
194 g black beans |
1 large tomato, chopped |
40 g cilantro, chopped |
Directions:
1. Heat oil in a saucepan. Saute onion and garlic until lightly browned. 2. Add quinoa ,tomatoes, and chicken stock. Season with cumin and cayenne pepper. Bring to a boil, then reduce heat, cover, and simmer 20 minutes. 3. Stir in corn and beans and simmer until heated through. Stir in cilantro until wilted. |
