lean turkey, great fiber quinoa. yummy Ingredients:
1 pound ground turkey breast |
1/2 cup chopped onion |
1/2 cup chopped green pepper |
1/2 teaspoon garlic powder |
29 ounce diced tomatoes, undrained |
1 1/2 cups cooked quinoa |
1 teaspoon sugar |
1 teaspoon chili powder |
1/4 teaspoon pepper |
1/8 teaspoon sauce, hot pepper |
1/2 cup shredded reduced-fat cheddar cheese |
5 peppers, anaheim |
Directions:
1. In a skillet, cook the turkey, onion, green pepper and garlic powder over medium heat until meat is no longer pink; drain. Stir in the next six ingredients. bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until heated through. 2. Stuff turkey mixture into anaheim peppers and bake in oven at 350 for 20 minutes. 3. Sprinkle with cheese. |
