Quinoa & Turkey Stuffed Ananheim Peppers

lean turkey, great fiber quinoa. yummy
Ingredients:
1 pound ground turkey breast
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 teaspoon garlic powder
29 ounce diced tomatoes, undrained
1 1/2 cups cooked quinoa
1 teaspoon sugar
1 teaspoon chili powder
1/4 teaspoon pepper
1/8 teaspoon sauce, hot pepper
1/2 cup shredded reduced-fat cheddar cheese
5 peppers, anaheim
Directions:
1. In a skillet, cook the turkey, onion, green pepper and garlic powder over medium heat until meat is no longer pink; drain. Stir in the next six ingredients. bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until heated through.
2. Stuff turkey mixture into anaheim peppers and bake in oven at 350 for 20 minutes.
3. Sprinkle with cheese.
