Quinoa Tabouli is a variation of the traditional Middle Eastern Salad made with bulgur or cracked wheat. Quinoa is high in protein and provides a refreshing nutty flavor! Ingredients:
1 tablespoon olive oil |
2 tablespoons lemon juice |
2 garlic cloves |
2 cups cooked quinoa |
3/4 cup fresh parsley |
2 scallions, finely sliced |
1 1/2 cups tomatoes, finely chopped |
1 salt and pepper |
Directions:
1. In a medium bowl, mix together all of the ingredients. Add salt and pepper to taste. You can place on thin 1/4 inch ribbons of romaine lettuce or a lettuce leaf. For variation try adding toasted sunflower seeds, Kalamato olives, baked tofu or sizzled tempeh! |
