vegetarian times - february 2009 Ingredients:
2 tablespoons olive oil |
1 onion |
2 celery ribs |
1 tablespoon cumin |
2 garlic cloves |
10 ounces spinach |
15 ounces tomatoes |
15 ounces black beans |
3/4 cup quinoa |
3 carrots |
1 1/2 cups monterey jack pepper cheese |
4 bell peppers |
Directions:
1. Cook onion and celery; add cumin & garlic. Stir in spinach, tomatoes, beans, quinoa, carrots and 2 cups water. Cook until quinoa is tender. Add 1 cup cheese. 2. Preheat oven to 350°F Fill each pepper with mixture, cover with foil and cook 1 hour. Uncover, sprinkle with remaining cheese and bake 15 minutes. |
