Quinoa salad with canned Alaskan salmon, fresh diced veggies (can be swapped out for veggies of one's choice) Ingredients:
3/4 cup quinoa |
134 g canned salmon |
190 g cucumbers, diced |
115 g celery, diced |
240 g red bell peppers, diced |
1 tbsp extra virgin olive oil |
4 tbsp apple cider vinegar |
1 tbsp balsamic vinegar |
4 tsp garlic, minced |
1/2 tsp onion powder |
1/2 tsp salt |
Directions:
1. Cook quinoa in equivalent amount of water. 2. Dice all vegetables. 3. Combine with quinoa, salmon, diced vegetables. 4. For the marinade, combine olive oil, vinegars, garlic, onion powder, salt and whisk. 5. Add to the quinoa and salmon mixture. 6. Toss and let sit for deeper flavor. 7. Enjoy! |
