Quinoa Salad with Peaches |

Ingredients:
1 1/2 cups water |
3/4 cup uncooked quinoa |
1/4 cup minced red bell pepper |
1/4 cup chopped green onions |
3 tablespoons fresh lemon juice |
1 1/2 tablespoons olive oil |
1/2 teaspoon kosher salt |
1 1/2 teaspoons honey |
1/4 teaspoon black pepper |
1 ripe peach, pitted and thinly sliced |
Directions:
1. Bring 1 1/2 cups water to a boil in a medium saucepan. Add quinoa to pan; cover, reduce heat, and simmer 20 minutes. Cool quinoa slightly. Stir in bell pepper and remaining ingredients. |
