Quinoa Salad Southwest Style |

I guess you cant have too much quinoa so here is another one. Of course I like it hotter than most. Ingredients:
1 c cooked quinoa |
1 can black beans drained |
1 c sweet frozen corn thawed and drained (use fresh roasted if available) |
1 can rotel tomatoes extra hot reserve juice |
2 jalapenos diced |
1/2 c red onion chopped |
1 yellow bell pepper chopped |
1 avacado chopped sprinkled with fresh lime juice |
2 t fresh cilantro minced |
2 cloves garlic minced |
2 limes |
2 t olive oil light tasting |
1/2 t coriander |
sea salt and fresh ground pepper to taste |
Directions:
1. Mix first four ingredients in air tight container 2. Add chopped veggies 3. Mix oil, juice of limes, 3 T reserved tomatoe juice, coriander, garlic, salt and pepper to taste. 4. Add to salad 5. Chill 6. Doesnt keep too well because of the avacado so eat it up |
