Pasta salad - without pasta A little too much balsamic vinegar! Ingredients:
1 cup quinoa, cooked |
1/8 cup balsamic vinegar |
1 cup cucumber, diced |
1 slice red onion, diced |
1 carrot, small, diced |
1 tomato, small, diced |
1/4 green bell pepper, diced |
1 tbsp basil, chopped |
1 tsp olive oil |
Directions:
1. wash and dice all your veggies and put them in a bowl. 2. follow cooking directions on quinoa 3. spritz veggies with olive oil and add quinoa 4. pour vinegar on mixture and mix 5. eat alone, serve on pita or on lettuce wraps |
