Quinoa was held sacred by the Incas and they referred to it as the mother of all grains. This recipe is from Cafe Shi in Ames, Iowa Ingredients:
2 cups mixed greens |
1/4 cup vinaigrette (any kind) |
1/4 cup red onion, diced |
1/4 cup red pepper, diced |
1/4 cup yellow pepper, diced |
1/4 cup mushroom, diced |
1/2 cup quinoa, cooked |
olive oil |
butter |
salt and pepper, to taste |
rosemary, to taste |
thyme, to taste |
Directions:
1. Toss greens with the vinaigrette and let set. 2. Saute onion, peppers, and mushrooms in a small amount of olive oil and butter. 3. Salt and pepper, to taste. 4. Add quinoa, sprinkle with rosemary and thyme. 5. Pour over greens and serve. |
