I was testing out this new to me grain and found this very simple dish to be quite delightful Ingredients:
100 g quinoa |
1 tablespoon fresh parsley |
1/2 sweet onion |
60 g carrots |
1 stalk celery |
1 green bell pepper |
1/2 teaspoon cumin |
2 tablespoons soy flour |
1/4 teaspoon garam masala |
1/2 teaspoon ground ginger |
Directions:
1. Cook quinoa in stock or water, about 15-20 minute Allow to cool. 2. Saute the onion, carrot, and celery until onions are clear. 3. Combine all the ingredients and spices and allow flavors to mingle 15 min or more prior to serving. Can be served hot or cold and can be made ahead. |
