Ingredients:
8 ounces frozen chopped spinach, thawed
8 ounces lowfat plain cottage cheese
8 ounces low-fat sour cream
4 eggs
1/2 cup egg white
1/2 cup shredded mozzarella cheese or 1/2 cup shredded italian cheese
1/2 cup quinoa (flakes, not the normal grain)
1/4 teaspoon sea salt
1/2 teaspoon garlic powder
Directions:
1. Mix all the ingredients together in a large bowl.
2. Transfer mixture to a pre-oiled lasagna pan.
3. Bake for 50-55 minutes. Let cool 5 minutes before slicing.
