Quinoa Pudding With Apricots and Pistachios |

Ingredients:
1 cup quinoa, rinsed |
2 cinnamon sticks |
1 cup water |
3 cups almond milk |
1 tablespoon honey |
1 teaspoon orange blossom water |
1/2 cup chopped dried apricot |
1/4 cup chopped pistachios |
Directions:
1. Place the quinoa and cinnamon stick with the water and almond milk in a medium saucepan and bring to a boil over high heat. 2. Lower the heat to low, cover with a lid and cook for about 12 minutes. Remove from the heat. 3. Stir in the honey and orange blossom water. 4. Serve topped with the apricots and pistachios. |
