Quinoa Pineapple Dream Dessert |

dessert Ingredients:
1 cup quinoa |
2 cups pineapple |
1 cup unsweetened vanilla soymilk |
6 oz fatfree, plain yogurt |
1 tbsp sugar |
1/4 tsp cinnamon |
2 tbsp cornstarch |
1/2 tsp vanilla extract |
2 tbsp finely chopped walnuts |
8 strawberries |
Directions:
1. Cook quinoa. 2. Add soymilk and sugar and cook for about 5 minutes. 3. Add pineapple and cinnamon. 4. Cook for five minutes, until thickened. 5. Blend cornstarch with water. 6. Stir in cornstarch mixture and cook for two minutes, until thick. Transfer to a bowl and let cool. 7. Fold in yogurt and vanilla extract, chill. Serve in dessert glasses topped with chopped nuts and a strawberry. |
