Nutritious quinoa is combined with veggies and seasonings to create a great side dish reminiscent of rice pilaf. Ingredients:
2 cups quinoa rinsed, if needed |
2 cups water |
4t olive oil |
1 onion, diced |
3 cloves garlic, minced |
8oz fresh mushrooms, sliced |
'1/2lb asparagus spear tips(save the rest for stock |
juice from 1/2 small lemon |
3 sprigs fresh thyme |
about half a dozen fresh sage leaves, rubbed and chopped |
kosher or sea salt and fresh ground pepper |
Directions:
1. Combine quinoa and water in medium sauce pan. 2. Heat to a boil, then reduce heat to medium/low, cover and simmer about 17-20 minutes, until tender. 3. Meanwhile, in medium skillet, heat oil and add onion and mushroom. Cook about 5-7 minutes, until just tender. 4. Add garlic, sage, thyme sprigs and asparagus and continue to cook another 5 minutes or so, until asparagus is tender. 5. Remove thyme sprigs and discard. 6. Fluff quinoa and add entire contents of the veggie mixture. 7. Add salt and pepper and lemon juice and stir well to combine. 8. Serve immediately. 9. (this would also be good with squash:) |
