On my first box of Quinoa, this recipe turned up - just posting for safe keeping as I've not made it yet. Ingredients:
1/2 cup carrot, diced |
1/2 cup green onion, diced |
1/4 cup celery, diced |
1/4 cup green pepper, diced |
1/4 cup red pepper, diced |
6 cups quinoa, cooked as per packet |
1/4 cup butter (or olive oil) |
2 garlic cloves, crushed |
1 cup almonds, sliced |
1/4 teaspoon oregano |
salt |
Directions:
1. Saute vegetables in butter or oil until crisp. 2. Stir in oregano. 3. Add sauteed vegetables to cooked quinoa and mix well. 4. Salt to taste. 5. Add almonds. |
