28 oz tomatoes, diced |
2 onions, diced |
2 bell peppers, diced |
2 cloves garlic, minced |
1 tbsp olive oil |
1/4 cups quinoa |
1 1/2 cups lentils |
14 oz garbanzo beans |
14 oz pinto beans |
28 oz vegetable broth |
1 tbsp salt |
1 cup kale, diced |
3/4 cup corn, frozen |
4 tbsp chili powder |
1 tsp cumin, ground |
Directions:
1. saute onions, garlic, and peppers. add in everything else except kale, change seasonings to taste. a few minutes before it's done, add in kale. |
