This granola is easy to make and high fiber. I have given it as teacher or Christmas gifts contained in large mason jars. Ingredients:
1 cup quinoa |
1 cup water |
1 1/2 cups red river hot cereal |
2 cups oatmeal |
1/4 cup sunflower seeds |
1/4 cup pumpkin seeds |
1/4 cup nuts |
1/2 cup honey |
2 tablespoons cinnamon |
1/4 cup butter, melted |
1 -2 teaspoon almond extract |
Directions:
1. Preheat oven to 275°F. 2. Microwave quinoa in 1 cup water for 5 minutes. Careful it does not boil over. 3. Combine dry ingredients. 4. Add quinoa and any remaining water to the dry ingredients. 5. Combine butter with honey and almond extract and add to dry mixture. 6. Spread evenly on parchment lined baking sheet. 7. Bake for 1/2 hour to an hour until lightly golden. Stir every 15 minutes while baking. 8. Remove from oven and allow to cool. Store in air tight container. 9. Serve with yogurt and fresh or dried fruit. |
