Quinoa,edamame and Cranberry Salad

Ingredients:
1 cup quinoa
1 cup diced red capsicum
1 cup edamame (shelled and boiled)
1/2 onion, diced
1/2 cup dried cranberries
1/2 cup totasted pine nuts
80 ml olive oil
80 ml white wine vinegar
1 tablespoon dijon mustard
1/2 teaspoon sugar
salt and pepper
Directions:
1. Cook quinoa in 2 cup swater.
2. Cool and toss with the rest of the ingredients.
3. For dressing shake all together and add as much as you like to salad.
