Quinoa,edamame and Cranberry Salad |

From my friend Sharon. Delicious! Ingredients:
1 cup quinoa |
1 cup diced red capsicum |
1 cup edamame (shelled and boiled) |
1/2 onion, diced |
1/2 cup dried cranberries |
1/2 cup totasted pine nuts |
80 ml olive oil |
80 ml white wine vinegar |
1 tablespoon dijon mustard |
1/2 teaspoon sugar |
salt and pepper |
Directions:
1. Cook quinoa in 2 cup swater. 2. Cool and toss with the rest of the ingredients. 3. For dressing shake all together and add as much as you like to salad. |
