What happens when Quinoa meets up with Chimichurra Sauce... Brasilia Quinoa! Ingredients:
* 1/2 cup quinoa, dry |
* 1/4 cup peanuts |
* 1 tbsp chimi chirri argentinian sauce |
* 1 tbsp chili paste |
* 1 cup chicken broth, reduced sodium |
* 1/2 cup edemame |
Directions:
1. In a heavy sauce pan lightly toast the quinoa seeds and peanuts. 2. Add the chimi churra sauce and chili paste to the broth and stir well. 3. Pour the broth over the toasted quinoa and peanuts and stir well and bring back up to a boil 4. Add the Edemame, reduce heat, cover. 5. Let simmer for 15 minutes. When finished the liquid will be absorbed and the quinoa will have plumped up and be fluffy. |
