These muffins are easy to make, healthy to eat and taste great! Quinoa is a really good source of healthy proteins and coconut milk is a better source of healthy fats than butter or most oils. Ingredients:
2 c spelt flour |
3 tsp. baking powder |
1/2 tsp. salt |
1 can (400 ml) organic cococut milk |
3-5 tbs. organic quinoa |
2 tbs. organic syrup |
1 organic egg |
Directions:
1. In one bowl, combine the first 3 dry ingredients and make a well in the middle. 2. Over medium heat, combine the coconut milk, quinoa and maple syrup in a small saucepan, stirring constantly. After about 5-10 minutes, take off heat and let cool. 3. When coconut mixture is cool enough to hold a finger into, quickly add and stir in egg.. 4. Dump wet mixture into dry, stirring until just combined. 5. Fill into pre-greased muffins tins, 3/4 full. 6. Bake at 200°C for about 15 minutes, or until golden brown. |
