Taken from Quinoa 365 Ingredients:
2 cups vegetable stock |
1 cup quinoa |
1 19oz can of chickpeas, drained and rinsed |
1 diced red bell pepper |
1/3 cup dried cranberries |
1/3 cup chopped walnuts |
3 tbsp chopped fresh parsley |
Directions:
1. Bring the stock and quinoa to a boil. Reduce to a simmer, cover and cook for 15 minutes. 2. In a large bowl mix quinoa and remaining ingredients. 3. Chill before serving. |
