Veggie casserole that can be made vegan Ingredients:
1 cup quinoa |
6 mushrooms, sliced thin |
1/2 acorn squash, sliced |
1 large onion, chopped |
1 1/2 cup vegetable broth |
1/4 cup shredded cheese (vegan if desired) |
1 tsp salt |
1 tsp pepper |
2 cloves garlic |
1 tbsp extra virgin olive oil |
Directions:
1. Preheat oven to 350 2. In a large skillet, saute onion in olive oil 2-3 minutes 3. Add squash, garlic, mushrooms and saute another 3-4 minutes 4. Add broth, quinoa, salt and pepper and bring to boil. Cover and simmer for 10 minutes 5. Transfer to 9x9 baking dish or casserole 6. Mix in 1/2 the cheese 7. Cover the top with remaining cheese 8. Cover and bake 30-35 minutes |
