quinoa based egg casserole Ingredients:
3 cups broccoli |
3/4 cup quinoa |
1 cup egg white |
1/4 cup hummus |
1/4 cup salsa |
8 ounces canned black beans, drained and rinsed |
1 tablespoon hot sauce |
1 dash pepper |
Directions:
1. Preheat oven to 400 degrees and grease a loaf pan. 2. steam broccoli until soft. 3. In a mixing bowl, combine all the ingredients + broccoli. Mix well. 4. Pour mixture into loaf pan and cook for 40 minutes. 5. Remove and slice. 6. Top with pasta sauce and enjoy! |
