Quinoa with Broccoli, Garbanzo beans and other spices Ingredients:
0.5 cup quinoa |
8 oz chicken broth |
16 oz garbanzo beans |
0.75 cup, chopped broccoli |
2 clove garlic |
2 teaspoon lemon juice |
1 tbsp extra virgin olive oil |
1/4 tsp mustard |
0.25 tsp fennel seed |
0.25 tbsp coriander seed |
Directions:
1. Bring broth (or water if you choose) to a boil, then add Quinoa and cook for 15-20 minutes. 2. In a mixing bowl combine cooked quinoa, chopped broccoli, garlic, lemon juice, mustard, fennel seed, olive oil and coriander seed. 3. Enjoy! |
